Chinaloa is a Mexican–Asian kitchen on Grand Street. We cook from scratch and build the menu for sharing: dumplings and bao finished with salsa macha, aguachiles bright with yuzu, and mains that arrive with some drama.
Come for weekend brunch with chilaquiles and tres leches French toast, or stay for dinner and a tamarind sake margarita.
Mexican tradition, French technique, Asian spirit. Twenty-five years in New York kitchens, from his father's Tex-Mex line to sous chef at Charlie Palmer and a decade with TAO Group. Chinaloa is the menu that puts all of it on one plate.
